Breakfast Sausage Casserole
Serves 4.

This dish surprised me. Could anything be this delicious? Granted, what man doesn’t love sausage? That it satisfies the requirements for a keto–friendly food is even better. I made four individual–sized casseroles, but you could prepare this in one large casserole dish and divide it into four portions.
Ingredients:
½ pound (225g) pork sausage
Salt and pepper to taste
½ cup diced onion — about ¼ large onion (60g)
2 medium zucchini, diced
3 large eggs
2 teaspoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon dried ground sage
1 cup (70g) shredded cheddar cheese
Directions:
Heat your oven to 375°F (190°C).
Heat a large skillet over medium high flame. Add the sausage meat and cook for 2 minutes . Season with salt and pepper to taste.
Add zucchini and onion, and cook for 4-5 minutes or until tender.
Spoon the sausage/vegetable mixture into a greased casserole dish or four individual oven-safe bowls.
In a large mixing bowl, combine the eggs, mayonnaise, mustard and sage. Mix well. Add ½ the cheddar cheese and stir to distribute.
Pour this egg mixture into the casserole dish(es).
Spread the remaining cheese on top and bake for 25 minutes. Allow to cool a few minutes, then serve.
