Homemade chicken soup, besides being delicious, is healthy for you. If you’ve seen the PDF for Boning a Chicken, you know I save the trim and freeze it for making chicken stock later. When I make stock I also freeze it and use it for making chicken soup. Here is my recipe for homemade Chicken Soup. This is also a very easy soup to make. Just cook the noodles and vegetables and then put everything together.

Ingredients:

4 ounces (113g) dry egg noodles
4 cups (1.4 liters) chicken stock (homemade or store-bought chicken broth)
8 ounces (225g) mixed vegetables; such as carrots, peas, corn, green beans, etc.
6 ounces (170g) cooked chicken meat; boneless and chopped (light meat, dark meat, or both)

Directions:

Start cooking the egg noodles according to package directions.

Heat the stock/broth in a saucepan to boiling. Add the vegetables and return to the boil, then reduce the heat to medium-low. Simmer 3 to 4 minutes. Add the cooked chicken.

When the noodles are cooked, combine with the soup and serve. It really is that simple.
