Chicken and Wild Rice Soup
Serves 4 to 6.

The original recipe did not use chicken. Rice soup, made with vegetable stock, might be preferred by vegetarians. At the very least, the original recipe could have added beans for protein. I wanted chicken in mine. Chicken and rice soup is common. The wild rice attracted my interest in this recipe.
Ingredients:
½ cup (90g) uncooked wild rice
1 tablespoon olive oil
1 quart (~1 liter) water
1 medium onion, chopped
1 celery rib, finely chopped
1 medium carrot, finely chopped
1 tablespoon clarified butter or refined olive oil
¼ cup (35g) all-purpose flour*
6 ounces (170g) raw chicken, light and/or dark meat, coarsely chopped
4 cups (1 liter) chicken broth or stock, more as needed
½ cup (100g) uncooked white rice
2 cups (475ml) half-and-half creamer
½ teaspoon dried rosemary, crushed (or ¼ teaspoon fresh, minced)
1 teaspoon salt
Directions:
In a medium saucepan, combine the wild rice, oil and water; bring to a boil. Reduce the heat; cover and simmer until partially cooked, 30 to 40 minutes. Drain.
Meanwhile, using a Dutch oven or large pot, cook the onion, celery and carrot in butter (or oil) over medium heat until the vegetables are partially tender, about 3 minutes.
Add the flour and stir until blended; cook and stir for 2 minutes. Add the chicken and stir.
Slowly add the broth (or stock) and wild rice. Stir. Add the white rice and bring to a boil; cook and stir until slightly thickened, 2 minutes. Reduce the heat to low and add the rosemary and salt. Simmer, uncovered, until rice is tender, 15 to 20 minutes. Stir often to check for sticking in the bottom of the pan. Add more stock as needed if the soup is too thick.
Add the cream and blend. Taste for salt. Heat to serving temperature, if necessary, and ladle into bowls or a tureen.
*In the video I used half a cup of flour, but it made the soup too thick. It gets thicker as it stands. The following day I had to add two cups of chicken stock before portioning it for freezing.
