Eggplant Parmesan
This receipe was modified from my mother's Eggplant Parmesan. Not much was modified. My mother didn't like olive oil because her Italian parents fried everything in the oil, even their morning eggs. I happen to really like olive oil; so, I used it in this recipe. No one is indifferent about eggplant. They either absolutely love it with all the passion of life or they absolutely loathe it as something more disgusting than road kill. I love eggplant. Maybe worth mentioning: I have a friend who hated Eggplant Parmesan. He only tasted it in restaurants. He worked up enough courage to taste mine and was amazed at how delicious it is. Now he makes it himself.
