Sweetened Condensed Milk
Makes about 14 ounces (400 grams).

Sweetened condensed milk is a popular ingredient in many baking projects. Although people on a keto diet are less likely to make sweet foods, the milk has its place in other recipes, such as for copycat Bailey’s Irish cream liqueur. Therefore, having a keto friendly version of this condensed milk might be welcome to some. Or it could be made with sugar by those who can’t find the product locally.
Ingredients:
18 fluid ounces (570ml) heavy whipping cream
9 packets stevia (or ½ cup sugar) (can be increased for those who prefer a sweeter product)
2 ounces (56g) unsalted or clarified butter
Directions:
Combine all the ingredients in a medium saucepan over medium heat.
Bring to a boil, whisking constantly, then reduce the heat to low.
Simmer, uncovered, 60 to 90 minutes, stirring often, especially toward the end of the cooking time when the liquid is reduced to a syrup texture. Let cool, uncovered, in the pan about 60 minutes.
Transfer the condensed milk to a storage container and refrigerate 1 hour. Use in your favorite recipes.
Can be made in advance and stored for several days in the refrigerator.
