Simple Blueberry Smoothie
Makes 1.
By Dennis W. Viau; modified from an Internet recipe.
Rather than trying to combine a mixture of fruits that might work well together, this smoothie benefits for a few simple ingredients. It can also be made more keto friendly by eliminating the protein powder, which might be high in carbohydrates.
Ingredients:
1 cup coconut milk
½ cup (50g) frozen or fresh blueberries
1 teaspoon vanilla extract
1 teaspoon coconut oil
1 scoop (28g) protein powder (optional)
Directions:
Combine all the ingredients in the jar of a high-end blender such as a Vitamix. Start blending at low speed and slowly increase the speed to high. Blend 30 to 40 seconds or until smooth.
If using a conventional blender that might be damaged by ice, allow the frozen pieces to thaw before blending.
